My friend Karen has a yummy and healthy pancake recipe i thought you would like.
½ c lowfat cottage cheese
½ c oatmeal
3 egg whites
Cinnamon to taste
Splenda to taste
Few drops of vanilla extract
Mix in blender, cook like regular pancakes
Good to be thin so they cook all the way through
Add blueberries if desired
Top with Sugar free syrup
This recipe sounds really REALLY yummy. I am going to have to send it to my diabetic friends as it would be PERFECT for them!
